Yes, I admit it, I've been neglecting this blog. I have tons and tons of material, but it's not up. And, I have a fabulous excuse. I was working on my garden. It's expanding. I put in a 6 foot x 2 foot raised bed early in the spring and that's been providing fabulous mixed salad greens. The other 8 foot bed has broccoli, kol rabi that is almost ready to eat, strawberries and zucchini I raised from seeds. About a month ago I thinned the zucchini and broccoli and put several of the zucchini plants in large round plastic containers.
And thus, my first zucchini. There's tons of them on the plants, but I picked the first one last night and sauteed it in a little olive oil with garlic, fresh green onion (also from my garden) some organic baby carrots (from Trader Joe's) and a chicken and sweet basil sausage sliced pretty thin (also from Trader Joe's). Right at the end I added already cooked brown rice and then just before I was taking it off the stove I put in 1/2 cut of non-fat yogurt and squeezed a little lemon on top. Yummmmmy!
In the last 3 weeks, I added two more 6 foot by 2 foot beds to hold spaghetti squash, egg plant, anaheim chilies, jalapenos, roma tomato plant, and tomatillos.
Today I'm building another bed, 6 feet by 3 feet for corn seeds that I just received from Freedom Seeds. These are organic and non-Monsanto seeds. If you are wondering why I'm making such a big deal about getting corn seeds that are non-Monsanto, check out Food, Inc., the movie.
Okay, got to go build that bed.
